Supa Boost Sea Minerals
These minerals are 100x concentrated sea water. During this process the salt naturally precipitates (separates) from the water. One cup of Pure Aussie Sea Minerals is equal to 100 cups of sea water in terms of mineral content but with only 1%-2% salt. The Supa Boost Sea Minerals also contain powerful herbs which can give you a boost when needed.

Delight-full Chocolate Orange Cake
With Cafe Gratitude's amazing Mudslide Pie still fresh on my taste buds, I decided to experiment with a chocolate orange version of it. The result is this creamy and scrumptious melt-in-your-mouth dessert that is sure to complement beautifully a Holiday feast.
Makes one 7 " cake
1/2 cup brazil nuts
1/4 cup almonds
1/4 cup shredded coconut
1 tablespoon cacao or carob powder
1 teaspoon vanilla extract
Pinch of salt
2 medjhool dates
1 teaspoon agave nectar
1-2 tablespoons cacao nibs (optional)
Process first 7 ingredients in a food processor until fine. Add agave and cacao nibs (if using) and process some more until the mixture just starts to stick together.
Orange & White Chocolate Filling
1 1/4 cups orange juice
1 1/4 cups cashews, soaked
1/4 cup agave nectar
2 tbs vanilla
1 tbs orange zest
1 tbs + 1 tsp lecithin powder*
1/4 cup + 1 tbs cacao butter
Blend all ingredients except lecithin and cacao butter until smooth. Add these and blend some more until well mixed. Put mixture in the fridge to set (see notes).
1/2 cup almond milk
1/4 cup agave nectar
3 tbs cacao powder
2 tbs vanilla
Pinch of salt
2 tsp lecithin powder*
1/4 cup cacao butter
*Lecithin is derived from soybeans and acts as an emulsifier. Look for lecithin (preferably non-GMO), in granules or powdered form, at your local HFS. If using granules, make sure to grind them up in a high speed blender of coffee grinder. If you don't have lecithin the fillings will need to be placed in the freezer to set rather than in the fridge. Also, the consistency won't be as fluffy and hold its shape as well, therefore it would be best not to let it sit at room temperature for too long. I'd recommend using 1 tbs + 2 tsp psyllium husks in the Orange & White Chocolate Filling and 2 1/2 tsp in the Chocolate Filling.
Blend all ingredients except lecithin and cacao butter until smooth. Add these and blend some more until well mixed. Put in the freezer to set.
Press your crust of choice into the bottom of the springform pan.
Pour half of the White Chocolate Orange mixture on top and set in the freezer for about an hour.
Top with the Chocolate layer and return to the freezer.
Once set, pour the rest of the Chocolate Orange layer and return to freezer until ready to serve.
Decorate with dried coconut and gogi berries ground up in coffee grinder, cacao nibs and orange filets.
Close your eyes and enjoy in good company!
~ The different layers of this cake can be prepared quickly, but you do want to start preparing this several hours ahead to allow enough time for the different layers to set during the assembly process. (I began around noonish in order to serve it that evening.)
~ I used the cake recipe for my Strawberry Shortcake as the first layer, but I think it would be also fabulous with a chocolate coconut crust. Take your pick!
~ You'll notice that the Orange & White Chocolate Filling is firmer than the Dark Chocolate Filling at first. I recommend keeping it in the fridge until ready to assemble the final layer for easier spreading.
Spinach Cream Pasta
Spinach being one of my favorite greens, I was looking for a new way to serve it and came up with the following raw rendition of a popular SAD dish. It has since then become one of my absolute favorites, and gotten raving reviews from others on RFC. So delicious and easy to assemble when you have company!
I actually found quite a few versions of the following recipe, all invariably calling for some kind of pasta tossed with a creamy cheese sauce and sauteed spinach. Sounded simple enough to tackle and give it a raw twist! I was quite pleased with the result. It certainly was a hit with Don and even our neighbor, Livina, who happened to drop by just in time for a taste.
2 or 3 zucchinis, peeled
Make linguine size pasta with the help of a spiral slicer. (Although any type/size would work well too.)
1 cup cashews and/or macadamias
1/2 to 3/4 cup water (depending on desired thickness)
1 garlic clove
1/4 cup lemon juice
1 tsp salt
Grind nuts until fine then add other ingredients and blend until smooth.
2 cups spinach, thinly sliced (or more, to taste)
1/2 tbs olive oil
1/2 tbs oregano
1/8 tsp salt
Place all ingredients in a bowl and massage to wilt the spinach.
1 cup crimini mushrooms, sliced
Toss mushrooms in a little olive oil and tamari, and let marinate for at least 1 hr.
Pine Nut Parmesan
1/2 cup macadamias
1/2 cup cashews
2 Tbs pine nuts
1 Tbs lemon juice
1Tbs flax meal
1 clove crushed garlic
1Tbs nutritional yeast
1/2 tsp salt
First process macadamias and cashews until ground. Then add the rest of the ingredients and process until well mixed. You don’t want to overprocess the pine nuts as they release a lot of oil.
Toss the noodles with the sauce. Gently fold in the spinach and half of the marinated mushrooms (save the rest for garnish).
Place mixture in a dish.
Sprinkle with Pine Nut Parmesan.
Top with remaining mushrooms.
Dehydrate at 110 degrees for 1 hour (optional)
You'll probably have extra sauce and parmesan, but I'm sure you'll find some way to use the left-overs.
Oh, and the parmesan freezes really well too.
