This is quick and easy to throw together. Stirred, Not Fried can be made a couple of hours in advance, is easy to wash up after and needs very little in the way of equipment! All this and it tastes phenomenal also!

I used to love stir fries and had them at least once a week, now I enjoy them just as much, if not more so raw. This one is gorgeous! The flavours of chilli, garlic and ginger (all optimal), combined with fresh organic vegetables and zucchini noodles are almost hard to beat! In my opinion, it's one of the best and easiest ever to come out of the Raw Pleasure kitchen!

I've been craving seaweeds lately. It seems I do every hot season. The other day my friend Lou dropped by and so I took full advantage of her generosity of spirit, and her chef qualifications and we together we created this yummy and satisfying recipe which is way better than anything I could do on my own! It's light and delicious and easy to make.

Karen Says: This is my take on this well know Italian recipe.  It’s fairly quick and easy to make but I do suggest you leave it for at least an hour before eating as the flavours just get better with time. I have added some options for different diets so there is a healthy meal here to suit everyone while getting a good dose of raw vegetables, healthy fats for the heart  and uptake of nutrients. Extra protein options are in the notes at the bottom.

This was so good I felt like I was having a good Italian pasta dish, the smoked paprika and raw olives give it that authentic note. It’s perfect as a side or can be altered to make it a substantial main meal.

If you like peas and avocado you are going to love this!! Actually even if you don't you'll be pleasantly surprised!! The cumin gives it a nice lift with the extra seasoning. I really enjoyed it. This dish would work well as an office lunch, keep the sauce and noodles separate then combine when needed. The sauce would also make a nice light salad dressing or substitute for guacamole or mayonnaise. I used frozen peas... I love them! It only takes a few minutes to defrost them in warm water and your ready to go*.

*Note from Jennie, Frozen peas are usually blanched before being frozen so technically not raw but a massive time saver if you don't have the time to shell a cup worth of peas. Snowpeas would also work well.

This is a delicious and satisfying gourmet raw meal. We've made this recipe large because it's a great one to share with friends and family who are not used to a raw way of eating. However you can easily halve this recipe.

Because it is such a rich recipe, we recommend that you serve it with a beautiful light salad. The salad will compliment the noodles well. Enjoy!
