Sweet 'n' Sour Veggies

Ohmygosh best sauce EVER! Yummy 4 ma tummy

Ingredients

Vegetables & Pineapple

Zucchini sliced into chunks, spiralised or julienned
Broccoli florets
Asparagus split down the middle and then into 1 inch lengths
Shiitake mushrooms sliced
Wombok shredded
Pineapple peeled, cored cut into small pieces

Sauce

1/4 cup apple cider vinegar
1/4 cup tomato
1/4 cup honey/dates
1 tablespoon sesame seeds
2 teaspoon shoyu (not raw)
1 teaspoon grated ginger
1 teaspoon sesame seeds
1 teaspoon lemon juice
1/2 teaspoon garlic

Methods/steps

Mix all of your vegetables and pineapple pieces in a large bowl.

Place all of your dressing ingredients in a jar, shake and pour over your vegetables

Assembly

Toss the dressing through the vegetables. Massage it in so that everything is nicely coated. Leave to marinate for around two hours if you can wait that long!

Additional Tips

It's meant to have 1 tablespoon of sesame oil & a small red capsicum but I didn't have any so I used coconut oil & a bit of cayenne pepper. Wow! I could eat that every day!!! X

This would also be lovely with beans, snow peas, cauliflower, a little big of very finely sliced onion, spiralised carrot or parsnip, celery, etc. A delicious recipe! This would also be lovely with some kelp noodles mixed throughout. Thank you Elly. :)
