In The Garden At Springtime

http://raw-pleasure.com.au/images/stories/savparsley.jpgI am in the process of planning my Spring garden at the moment. Spring has come a bit late this year, down on the South Coast. We've had a wet Winter and it’s only the last couple of days that I have really felt like Spring has arrived.

We’ve had clear, warm days. The fruit trees have blossoms and a sprinkling of leaves, the herbs that I planted before Winter have all doubled in size in the last week and my strawberry plants have got an abundant harvest in the making.

The other indicator that Spring is in the air are all the weeds, the garden is full of them! I’ve either pulled them out and put them in the compost bins, mulched them in with the spade or we’ve eaten them. Things like dandelion, chickweed, dock, thistle and nettle are edible and great used in salads or juices.

Mesquite Vanilla Balls

Quick to make and a wonderful treat. I've fed these to people from all walks of life who have enjoyed them immensely. Last Christmas I had these on the table and they were a big hit! ~ Jenniehttp://raw-pleasure.com.au/images/stories/mesquite%20vanilla%20balls.jpg

Ingredients

250g macadamia nuts
500g pitted fresh dates
1 vanilla bean ground
1 ½ tablespoons of mesquite

Methods/steps

1. Grind macadamia nuts in food processor using the 'S' blade, until like breadcrumbs. Add ground vanilla bean, mesquite and dates. Process again until the mixture forms a ball.

2. Roll into small balls using your hands.

3. Roll each ball in mesquite

Variations:

Try rolling these little morsels in sprouted and dehydrated buckwheat or dessicated coconut for a change. Yummy!

Choc Mint balls – Omit the vanilla and mesquite and replace with 1 tbspn of raw cacao powder and one or two drops of mint essential oil. Spearmint and Peppermint both work well.

Omit the mesquite and use lucuma for a different kind of sweetness

Replace the macadamia nuts with cashews

Kitchen sink = bowl by Sheryl from Raw Pleasure

Yes you heard it right. For making large batches of kale chips, broccoli salad etc Piers and I are using our kitchen sink as a bowl. Sinks are a hive of bacteria so give your sink a good wash, perhaps with some hydrogen peroxide, then put in the washed plug. All the veggies etc get tossed in (literally a WHOLE sink full) then we pour over the sauce and keep going until the flavours are right. A sink load is about what fills a 9 tray dehydrator.

I love it! Before we never ever had a bowl big enough to do our bulk recipes... now we do and it's super convenient to wash!!

I don't think I'd mix up a cracker batter in there... (never even thought of it)... but you never know... I might give it a try one day.
